Risotto is a rich and creamy, traditional Italian rice dish. I normally don't really like rice, yet I love risotto, I guess because it is rich and creamy. My friend Lisa made some really good risotto once (and I'm still waiting for her to make it again). And Archer Farms (the brand you can find at Target) sells Risotto in a box that you can prepare easily and quickly on the stove.
